We’ve all heard that everything’s bigger in Texas, and when it comes to the food trucks in Houston, San Antonio, Plano, Richardson and McAllen, bigger means more options and many more flavors. After all, this is Texas, the birthplace of Tex-Mex. So don’t be surprised to find more evidence of food fusion (think: Korean-Mexican tacos, Thai-inspired ice cream) as you browse menus all over the state. Here are eight food truck meals you shouldn’t miss.
Mr. Sizzles, Houston

This Houston food truck has been fuelling Houstonians since 2012, specializing in juicy, messy burgers served on freshly baked buns. If you want to indulge your taste buds (and blow your calorie count), ask for the H-Town Sizz, a fresh ground beef patty piled high with pepper jack and Wisconsin cheddar cheeses, guacamole, bacon, lettuce, tomato, onions, jalapenos and buttermilk ranch dressing. Word to the wise: Grab a handful of napkins before you step away from the neon truck. You’ll need them to clean up after tackling this beast of a burger. Oh My Gogi!, Houston
What to order: OMG! Fries
You might order fries on the side at most trucks, but not at Oh My Gogi! When you order the OMG! Fries—a steaming basket of fried potatoes smothered in Korean beef, colby jack cheese, onions, cilantro, spicy mayo and sriracha—expect a full meal. If for some reason that’s not enough to satisfy your appetite, they offer a Loaded Gogi, a similar platter of fries with twice the meat plus a fried egg and kimchi.
Mia Marco’s Pizza, San Antonio
What to order: pepperoni pizza
You may be standing in the heart of San Antonio, but you’ll swear you’ve been transported to Brooklyn when you bite into a slice of New York City-style pepperoni pizza from this award-winning food truck. If you prefer your pie with extra spice, try Mia Marco’s Hotta Soppressata, a spicy salami pizza flavored with chili pepper-infused hot honey. Singhs, San Antonio
What to order: brisket rice bowl
The founders of Singhs refer to the grub coming out of this San Antonio food truck as “a mother’s southern Vietnamese recipes as told by her Texan son.” Nowhere is that more evident than the brisket rice bowl, an irresistible combination of fragrant coconut jasmine rice and tender, flavorful beef brisket.

Craving some good, old-fashioned soul food? This Dallas-area food truck—which can often be found at Hub Streat, Plano’s food truck park—specializes in homestyle, made-from-scratch dishes. Its fried catfish and mac ’n’ cheese plate is the perfect example of a stick-to-your-ribs dinner that foodies flock to the South to find.
Pit Commander BBQ, Richardson
What to order: beef short ribs
You can’t talk about Texas cuisine without dishing on barbecue. For some of the best in the state, look for Pit Commander BBQ’s mobile smoking rig. Its specialty is craft-smoked beef short ribs made in signature central Texas style. That means there’s no hiding behind sauces; the meat is seasoned with dry spices and cooked low and slow over oak and pecan wood until the beef is tender, moist and bursting with flavor.
Nuri, McAllen
What to order: Nuri Tako
The menu at Nuri is a fusion of Mexican and Korean flavors that come to life in savory dishes like Korean Karnitas, Devine Swine (an Asian pork belly taco with ponzu sauce) and the Q-dilla. But the truck is probably best known for its signature Nuri Tako, a mouth-watering mix of seared steak with grilled onions, Oaxaca cheese and chori-queso on a homemade soft flour tortilla. Order up!
Rolling With Cream, McAllen
What to order: Strawberry Bears

Ready for dessert? This ice cream truck, typically parked in the McAllen Food Park, specializes solely in Thai ice cream rolls. The made-to-order ice cream is prepared on a chilled steel pan and served in small rolls that look a bit like a cannoli or an egg roll. Its Strawberry Bears concoction features freshly made vanilla ice cream with strawberries and graham crackers and is topped with whipped cream, strawberries and graham cracker bears.
